These are the ingredients required for the curry masala:
Peas (1/4 cup), Green onion (1 bunch), Red onion (1 small), green chillies (3-4), Ginger (1"), Garlic (3-4), lemon grass (white part of one-two stalk), pepper, turmeric, roasted cumin and coriander seeds (1 sp cumin, 2 sp coriander)
Original recipe calls for cilantro, minus peas. But since I was running short of cilantro, and since it had to be 'green' I used peas. I think it was a good move because not only it gave a lovely green color, but also peas gave a sweet smell to the masala.
Grind all of these. Add water in order to be able to grind into a smooth paste. (Approx 1 cup water)

Heat oil. Add finely chopped onions (1tbp) and add masala.
Let it cook for 5-10 minutes on sim. How does one know that it is cooked? Well for one, color changes by a bit. Another way is by smell. You get a tangy perky (minus pungent) aroma when done.
Next step : Add in veggies and coconut milk
I used these veggies for the curry (meaty beans, ash gourd, whole peas, zucchini..Plus more to go).
Peas and boiled potatoes
Cut Tofu into cubes. I used soft tofu. But I would recommend firm if this is taken with rice, well just because it tastes good.
